Our greatest strength is not the size of our vineyard.
It is the journey behind it.
Before planting our first vine, we spent years learning from wine professionals, winemakers and some of Europe's most respected wine regions. That experience shaped the way we think about every decision at Château Aarav—from the varieties we selected to the way we approach our vineyard and our future winery.
Our journey took us through Germany, Italy, Spain and France, where we visited wineries, experienced different wine cultures and studied how individual regions express their identity through wine.
Working as an Assistant Sommelier under Maître Sommelier Christophe Meyer taught us that great wine begins long before grapes enter the cellar. Our experience at Weingut Kopp in Baden-Baden brought us closer to the practical side of winemaking and reinforced the importance of patience, precision and craftsmanship.
We brought those lessons back to India, but we did not bring them back to recreate Europe.
That distinction matters to us.
Château Aarav is being built around the belief that the Eastern Himalayas should not have to imitate Burgundy, Bordeaux, Tuscany or the Mosel to produce wines with character.
We want to discover what our own landscape can express.
Our estate combines international knowledge with an Indian identity, mountain terroir, limited production, patience and craftsmanship.
Our vineyard is intentionally modest in scale. Rather than measuring success by the number of hectares we cultivate or the number of bottles we eventually produce, we want to understand every row, every vine and every season.

The Eastern Himalayan foothills give us a landscape unlike the established wine regions from which we learned. Our vineyard in Pedong, Kalimpong, is surrounded by mountains, forests, fresh mountain air and changing seasons. These conditions are not something we want to overcome. They are part of the identity we want our wines to express.
Every grape variety has been selected with that philosophy in mind. Pinot Noir, Sauvignon Blanc, Riesling and Cabernet Franc each bring a different possibility to the estate, and each vineyard block gives us another opportunity to understand how these varieties respond to our land.
Our vines are still young, and our first harvest is expected around 2030. This means we have time to observe, learn and refine our approach before asking the vineyard to deliver its first wine.
We believe quality cannot be forced.
A great wine cannot be created simply by increasing production or following a formula. It requires healthy vines, careful farming, favourable seasons, thoughtful winemaking and, most importantly, patience.
That is why every future bottle of Château Aarav will represent more than a grape variety. It will represent one place, one vintage and one philosophy.
We also believe that authenticity matters. We do not want to make wine that simply looks like it belongs somewhere else. We want someone opening a bottle of Château Aarav to know that it could only have come from this journey, this vineyard and this landscape.
Our measure of success will therefore not be the number of bottles we produce.
It will be the confidence with which we place our name on every label.
We are still at the beginning of the story. The vines are young, the winery is part of our future vision, and there is much more for us to learn.
But that is precisely what makes the journey exciting.
We are not trying to prove that the Eastern Himalayas can become another France, Italy or Germany.
We are here to discover what the Eastern Himalayas can become in its own right.
