Why We Chose the Eastern Himalayas for Château Aarav

The vineyard is our greatest teacher. Every bottle we produce begins not in the cellar, but in the landscape that surrounds us.
Located in the Eastern Himalayan foothills of Pedong, Kalimpong, Château Aarav is a two-hectare estate dedicated to understanding and expressing the identity of one remarkable place.
For us, the land is not simply where the vineyard happens to be located. It is the foundation of everything we hope to create. The soil, altitude, climate, rainfall, mountain air and surrounding landscape all contribute to the conditions in which our vines grow.
Our estate is situated along Upper Cart Road in Pedong, Kalimpong, West Bengal, at approximately 1,240 metres above sea level. Here, rolling mountain landscapes, forests, fresh air and changing seasons create a distinctive environment for viticulture.
The elevation brings cool mountain nights and moderate daytime temperatures, encouraging a slower rhythm of ripening. Seasonal rainfall and fresh mountain airflow add further dimensions to the environment in which our young vines are establishing their roots.
But we are still learning what this land can truly express.
Our vineyard is planted with Vitis vinifera and divided into four individual blocks: Pinot Noir, Sauvignon Blanc, Riesling and Cabernet Franc. Each variety has been selected with the belief that it can reveal a different aspect of the character of our Eastern Himalayan home.
We do not want to force the land into a predetermined idea of what a wine region should be. We want to observe it, understand it and allow its character to guide our decisions.

This is why we believe the greatest wines are not simply made—they are revealed.
The work begins with listening. Listening to the soil. Listening to the seasons. Understanding how rain moves across the land, how the mountain air changes through the day, and how each vineyard block responds to its surroundings.
Our approach is intentionally focused on quality over quantity. A two-hectare estate allows us to remain close to the vineyard and give individual attention to every block and, wherever possible, every vine.
This relationship with the land will continue to evolve as the vineyard matures. Through observation and professional soil analysis, we will continue learning about each parcel and adapting our cultivation practices to its needs.
The vines are young today, and our first harvest is expected around 2030. Much of the most important work is therefore still happening beneath the surface as roots establish themselves and the vineyard begins to find its rhythm.
We are not in a hurry to define the final character of Château Aarav. We believe that understanding a place takes time, and that patience is an essential part of creating wines with a genuine sense of origin.
One day, when someone opens a bottle of Château Aarav, we want them to taste more than a grape variety or a particular vintage.
We want them to experience something of the place itself—the Eastern Himalayas, the mountain climate, the soil, the seasons and the patience that went into growing the vines.
For now, the land remains our greatest teacher.
And we are still learning.
